How to make them

  1. Preheat your oven to 180C or gas mark 4.
  2. Grab a 20cm square baking tin and grease it with butter, then line it with greaseproof paper. Leave a bit hanging over the sides.
  3. Put the butter and chocolate in a microwave-safe bowl and pop it in the microwave. Heat it for 20 seconds at a time, checking and stirring frequently to make sure it doesn’t burn.
  4. Put 3 whole eggs and 2 egg yolks in a large bowl. Add the vanilla essence and whisk until the mixture is light and fluffy.
  5. Add the sugar in two halves, whisking each time. It helps to pour it around the edges of the mixture.
  6. Whisk the mixture until stiff.
  7. Pour the chocolate into the egg mixture, again around the sides of the bowl.
  8. Put the flour, cocoa powder, salt and a third of the biscuits into the mixture, and stir it until it’s mixed through.
  9. Pour the mixture into your baking tin and sprinkle the rest of the biscuits over the top, pressing them down lightly.
  10. Put the tin on the middle shelf of the oven and bake for 25-30 minutes.
  11. Leave to cool. The top will crack – that’s normal.
  12. Pull the brownies out using the overhanging greaseproof paper and cut them into squares.
  13. Dust with icing sugar and serve.
